HubSpot added a contact email logging rules option that creates a new contact from incoming email on connected personal accounts. The question is whether that is the contact list you want.

Trisha Merriam set the frame: "let's really get these logging rules right."

My rule of thumb on air: "if one in ten of them is the contact you care about, turn it on." If it's mostly noise, set the rules first, then turn it on.
